Rigatoni alla Vodka

A comforting pasta dish with a creamy tomato sauce.

Ingredients:

  • 1 Pound Rigatoni pasta
  • 1 Shallot, finely chopped
  • 3 Garlic cloves, minced
  • 2 Tsp Red pepper flakes
  • 1 tube Tomato paste
  • 1/2 Cup Vodka
  • 1 Cup Cream
  • 1 Cup Reserved pasta water
  • 1 Pinch Salt
  • 2 Tbsp Olive oil

Directions:

  1. Bring a pot of water to a boil and cook the pasta 2 minutes shy of its directed cooking time.
  2. Add the shallot to a large skillet with the olive oil at medium high heat. Cook for 3-4 minutes or until translucent.
  3. Add the red pepper flakes and garlic to the skillet and sauté for 1-2 minutes.
  4. Add the tomato paste to the skillet and stir until combined. Cook for 1-2 minutes.
  5. Add the vodka to the skillet, stir and bring to a boil. Cook for 2 minutes or until the alcohol has cooked off.
  6. Add the cream to the skillet and stir until combined.
  7. Add the pasta to the pan to finish cooking it in the sauce. Add the reserved pasta water to the pan as needed to reach desired thickness.
  8. Add salt to adjust for taste and enjoy!
