Rigatoni alla Vodka
A comforting pasta dish with a creamy tomato sauce.

Ingredients:
- 1 Pound Rigatoni pasta
- 1 Shallot, finely chopped
- 3 Garlic cloves, minced
- 2 Tsp Red pepper flakes
- 1 tube Tomato paste
- 1/2 Cup Vodka
- 1 Cup Cream
- 1 Cup Reserved pasta water
- 1 Pinch Salt
- 2 Tbsp Olive oil
Directions:
- Bring a pot of water to a boil and cook the pasta 2 minutes shy of its directed cooking time.
- Add the shallot to a large skillet with the olive oil at medium high heat. Cook for 3-4 minutes or until translucent.
- Add the red pepper flakes and garlic to the skillet and sauté for 1-2 minutes.
- Add the tomato paste to the skillet and stir until combined. Cook for 1-2 minutes.
- Add the vodka to the skillet, stir and bring to a boil. Cook for 2 minutes or until the alcohol has cooked off.
- Add the cream to the skillet and stir until combined.
- Add the pasta to the pan to finish cooking it in the sauce. Add the reserved pasta water to the pan as needed to reach desired thickness.
- Add salt to adjust for taste and enjoy!
